UP Students Turn Food Waste Into Nutritious Products
Story 1
Students at the University of Pretoria have turned food waste into market-ready products and dishes.
For their final assessment, they transformed ingredients usually discarded during harvesting and production.
Retail Management students created three products: STOAT, an oats mix with imperfect fruit; Benefiz, fizzy drink tablets from fruit and vegetable trimmings; and Noods and Moods, a spicy vegetable ramen with vegan macadamia ice cream made from spent coffee grounds.
Culinary students served a zero-waste dinner featuring potato croquettes with onion ash, a reworked beef Wellington, and an amasi cheesecake.
The project showed practical ways to reduce food waste while creating nutritious, sellable options.
