Schools in Kentucky, USA are serving meals made from locally-raised produce. At Boyle County High School, beef fajitas with fresh vegetables have replaced pan pizza and fruit cups.
About 150 farms supply roughly 90 Kentucky school districts with local produce, including sustainably-raised beef from nearby Circle G Farms, supported by a pandemic-era grant.
Cafeteria staff say cooking with local ingredients has improved meal quality and allowed them to try new recipes, benefiting schools and farmers alike. Students say they love the food.
